Follow me : Twitter : / thefrugalchef Facebook : / 245282282242 Instagram : / thefrugalchef How to Make Hazelnut Cookies Makes about 25 cookies 1 cup (130 grams) of raw hazelnuts 1 cup (120 grams) all-purpose flour 1/2 teaspoon (3 grams) salt 1/2 cup (113 grams) unsalted, softened butter 1/4 cup (50 grams) sugar 1 egg yolk — room temperature 1 teaspoon (4 grams) vanilla extract Heat your oven to 325°F (162°C). Line two baking sheets with parchment paper or a silicon mat. Place the hazelnuts in a food processor and process until finely chopped. Don’t worry about small pieces and do not turn it into a paste either. Set aside. In a bowl, whisk together the flour and salt. In another bowl, cream the butter and sugar until smooth. Add the egg yolk and the vanilla. Cream that. Add the flour into the butter mixture and mix until you have no more dry patches. Fold in 3/4 cup of the chopped hazelnuts. Keep the remaining 1/4 cup for garnish. Scoop the cookies on to the baking sheet. You can use a cookie scoop or a spoon. Gently press them with a fork. Sprinkle remaining hazelnuts on to the cookies and gently press down with your fingers. Bake the cookies for 12 to 15 minutes — until the edges are lightly browned. Remove from oven and let them cool on the sheet, on top of a cooling rack, for about 5 minutes. They will be soft but will harden as they cool down.
