How to make last minute Fruit Cake that is so rich and moist. No need to soak in alcohol and so easy to make. Here's what you'll need: 1 cup unsalted butter (227g) 2 tbsp honey (30g) 1/2 cup brown sugar (100g) 1/4 cup dark brown sugar (50g) 2 tbsps orange and lemon zest 1 tsp vanilla (5ml) 3 cups dried fruits ( I used raisins, sultanas, cranberries, cherries and dried papaya) 1/3 cup fresh orange juice (80ml) 3 large eggs 2 tbsp oil (30ml) 2 cups all purpose flour (250g) 2 tsp baking powder (8g) 1 tsp cinnamon powder 1/2 tsp ginger powder 1/2 tsp nutmeg 1/2 tsp salt 1 cup walnuts (or any nuts of your choice) 1. In a pan, over medium heat, cook butter, honey, brown sugar, dark brown sugar, vanilla and zests. Bring to boil then add dried fruits. And add orange juice. Then cook for 2 minutes. Let it cool down completely. 2. Preheat oven at 160C/320F. Beat eggs and oil, then add to the cooled mixture. Mix well. 3. Sift in all purpose flour, baking powder, cinnamon powder, nutmeg, ginger powder and salt. Then add nuts. Mix to combine. 4. Brush an 8x3 inches pan with butter and line with parchment paper. Place batter and spread evenly. 5. Bake in a preheated oven for 1 hour or until toothpick comes out clean when inserted. Brush with apricot jam or any jam you prefer. 6. Serve and enjoy! 7.
