I pressure canned sweet corn, froze corn on and off the cob, and got creative with our pickling and jam jars. Here’s what I preserved this week: 🌽 Pressure Canned Sweet Corn 🌽 Frozen Corn on the Cob 🌽 Frozen Corn off the Cob 🥒 Refrigerator Pickles (two ways!) 🫙 Pickle Salsa — tangy, spicy, and perfect for pantry meals 🫐 Blackberry Basil Jam — no pectin needed, just summer in a jar! 👉 Refrigerator Pickle Brine Recipe: 2 cups vinegar 2 cups water 2 Tbsp salt 1 Tbsp sugar Every bit really does count when you’re feeding a family from the pantry.
