In this video, I attempted to setup my WSM 22.5 like a Weber Kettle to charcoal some porkchops. I used the water pan as the charcoal pan and sat it on the middle grate which put the charcoal 8-9 inches from the meat. Due to recycling used charcoal, I ended up having to raise the charcoal up closer by puting 4 bricks under the pan to get the heat closer to the meat. This worked out just fine. It was a fairly short cook. In the future, I'll install another set of clips in the 3 brackets which hold the grates in a hole I drilled midways the bracket when assembling the grill to add another clip. (I had watched another channel do this to his to add more capacity and another grate in the middle of the top and middle grates.
