Founder and owner of Japanese Soba Noodles Tsuta (Japanese Soba Noodles 蔦) has passed away September 23rd 2022. He was the first ramen chef in Japan to ever gain a Michelin star with Tsuta. Yuki Onishi rose to global fame in 2015, when the Michelin Guide awarded Japanese Soba Noodles Tsuta with a single Michelin star. This was the first time a ramen restaurant was awarded with a Michelin star. The main draw of Tsuta has always been their shoyu ramen, which was executed in a way that is more similar to a 5 course meal at a French restaurant. Tsuta's shoyu ramen features so many different elements, which makes every single bite of the meal taste different than the others. An infamous addition was the shaved black truffles, which clearly set their bowl apart from all other ramen in Japan, especially at that time. But the creativity of Yuki Onishi did not stop there. Tsuta has always been known not only for their shoyu ramen, but also for their creative and regularly changing "gentei" special bowls, which were often only available at certain times of the day or for a short time like several weeks or months.
