Nothing says the start of summer like fresh strawberry torte! This German dessert is light and refreshing and can be adapted to use whatever fruit you like, both fresh and even canned! Join me in my "not dream" pre-renovation kitchen to whip up some summer goodness. Here is the Two-Egg Vanilla Cake recipe for the Tortenboden: 1 3/4 plus 1 tbsp a-p flour 1 1/2 tsp baking powder 1/2 tsp salt 1/2 cup soft butter or margarine 1 cup white sugar 2 eggs 1 tsp vanilla 3/4 cup milk Combine flour, bp, and salt in a bowl. Set aside. In a medium sized bowl, cream together butter and sugar. Add in two eggs and beat until light and fluffy. Measure milk and add vanilla. Add flour mixture and milk mixture alternately, beginning and ending with flour and beat until smooth after every addition. Pour into two greased and floured torte pans. Make at 350F for 25-30 minutes, until cake just begins to pull away from sides of pan and springs back when pressed lights. Cool in pan for 10 minutes, then turn out onto rack. Fill with fresh fruit, and top with glaze.
