Bottle Gourd Halwa, also known as Sorekaya Halwa, is a traditional Indian dessert made with grated bottle gourd, milk, sugar, and ghee. This sweet dish is flavored with cardamom and garnished with nuts and raisins, making it a delicious and rich treat for any occasion. Perfect for festivals or as a sweet ending to a meal, this halwa is both nutritious and delectable. Ingredients: Bottle Gourd (Sorekaya) – 1 medium-sized, peeled and gratedMilk – 2 cupsSugar – 1 cup (adjust to taste) Ghee – 2 tablespoons Cardamom Powder – 1/2 teaspoonCashews – 10-12 Raisins – 10-12 Khoya (Mawa) – 1/2 cup (optional, for richer flavor) Instructions:Preparation:Peel the bottle gourd and grate it finely.Set aside the grated bottle gourd.Cooking:Heat 1 tablespoon of ghee in a pan over medium heat.Add cashews and raisins. Fry until they turn golden brown. Remove and set aside.In the same pan, add the grated bottle gourd. Sauté for 5-7 minutes until the raw smell disappears.Pour in the milk and bring it to a boil. Reduce the heat and let it simmer, stirring occasionally until the bottle gourd is fully cooked and the milk reduces.Add the sugar and stir well. Continue to cook until the mixture thickens.Final Touch:Add the khoya (if using) and mix well.
