Ingredients Mutton - 500gms FOR THE MARINATE Onion - 1pc Ginger - 1inch Salt - 1tsp Turmeric Powder - 1/2 tsp Garam Masala Powder - 1tsp (Recipe Link : • Garam Masala Recipe | Homemade Tasty Garam... ) Curd - 2tbsp *Take all the ingredients in a blender and make a fine paste. *Mix the paste with the mutton and marinate for 8hrs or overnight in freezer. FOR THE CURRY Mustard oil - 4tbsp Bay leaves - 3pcs Green Cardamom - 4pcs Black Cardamom - 1pc Cloves - 5pcs Cinnamon - 2inch Onion(finely chopped) - 3pcs(large) Ginger garlic paste - 2tbsp Green Chili paste - 1tbsp Cumin Powder - 1tbsp Coriander powder - 1tbsp Kashmiri Red Chili Powder - 1/2 tbsp Curd - 2tbsp Salt - 1tbsp Tea liquor - 1/2 cup Clarified Butter(Ghee) -1/2tbsp Hot Water Head oil in a pan and add Bay leaves, Green Cardamom, Black Cardamom, Cloves, Cinnamon and fry. *Add the finely chopped onions and fry till the onions turns golden brown. *Add ginger garlic paste and green chili paste and fry well for 5 mins. *Add cumin powder, coriander powder, kashmiri red chili powder and fry till the mixture leaves oil. *Add the marinated mutton and fry till the mixture leaves oil. *Add curd and mix well in high flame. *Add salt and mix. Then cover the lid and cook for 10 mins in low flame. *After 10 mins open the lid, scrape the sides of the pan and mix. *Add 1/2 cup hot water and then cover the lid again for another 10 mins in low flame. *Repeat the same process of adding 1/2 cup of hot water and covering the lid and cooking for 10 mins until the mutton is tender. *Finally open the lid and add 1/2 cup tea liquor and mix, then cover the lid for another 10 mins until you get the desired color. *Add clarified butter (ghee) and turn off the flame. *Let it set for another 5 min before serving.
