Samo Millet Dosa is prepared by soaking and grinding Samo Millet, Urad Dal (split black gram) and other ingredients and fermenting the batter overnight. The dosa is cooked on a non-stick tawa or griddle with a little oil/ghee, and served with your favorite chutney or sambar. Since it is made without rice, it is a great option for people who are looking for gluten-free or low-carb alternatives to traditional dosa. Samo Millet (Moraiyo) Dosa: Ingredients: Samo millet/little millet/ Moraiyo - 1 cup Urad dal(Split Black Gram) - 1/4 cup Methi/fenugreek seeds - 1tsp Sago/tapioca pearl - 2 tbsp Salt to taste Water - 1/4 to 1/3 cup or as needed Oil/ghee for roasting Instructions: Rinse the Samo Millet, Urad Dal, methi and sago, and soak them in water for 6 -8 hours or overnight. Drain the water and grind the soaked mixture into a smooth batter using a little water. Add salt to taste and mix well. Allow the batter to ferment for 8 hours or overnight. Heat a non-stick tawa or griddle on medium heat, and grease it lightly with oil. Pour a ladleful of batter onto the center of the tawa, and spread it gently in a circular motion to make a thin dosa. Drizzle a little oil/ghee around the edges of the dosa, and cook until the bottom turns golden brown. OPTIONAL: -Flip the dosa and cook for another minute until the other side is cooked as well.
