Polenta is a dish made from white or yellow ground corn (corn grits), it can be prepared in many different ways, for breakfast, lunch, or dinner. It is very easy to make, you just have to boil the water, add salt and after that, slowly pour the ground corn in a boiling water, continuously stirring to avoid lumps. This dish is originally from North Italy, and it can be eaten warm or cold, you can cut it into a triangle for starter, pour on it some sauce, it can be baked after cooking for breakfast, you can mix it with different dishes, ingredients. The possibilities are endless. What is very important to say, it is gluten-free, low calories meal, it has a lot of nutrients, vitamins, and minerals that our body needs. After wheat and rice, corn is also on the top of the most important grains in the world. It is also a perfect choice for kids, even for babies. COrn has an influence on supporting the immune system, lower the bad cholesterin, and it is a strong antioxidant as well. In this video, you can see the very simple, low budget, easy-to-make polenta meal combination with stir-fried vegetables. I added some ground cumin, coriander, and nutmeg for a bit of oriental taste which I like. Of course, you can add even Curcuma, or curry, any spice you like to use in your daily cooking procedures. It is all up to you. A vegan kitchen is, I like to say, a recycling kitchen, it is a never-ending story. If you decide to make this recipe, you can use the vegetables that you have in your kitchen at that moment, it has not to be strictly those ones which I have been using in the video. Also, if you are not using oil, you can always use neutral coconut oil, or even stir fry the veggies on water, or on some vegan butter. As I said, you can play with the ingredients.
