For more knife sharpening content subscribe to our channel or check out our website: www.worksharptools.com/education First, Ben shows us how to sharpen a Benchmade Altitude using the Work Sharp Ken Onion Knife Sharpener. Then he shows how to sharpen a set of Wusthof kitchen shears. Ben recommends starting with the coarse X65 belt to raise a burr, then hone the burr and leave a razor sharp edge with the X4 belt. Rest the knife in the guide, power on a pull through. Make sure you lift off, or cut power when the tip comes into contact with the belt. Raise a burr then repeat on the opposing side.
