燕皮是用細絞豬肉跟太白粉作成的皮. 可以做成肉燕或者火鍋用的燕餃. 要擀成薄一點會比較好. 不過很花時間. 這次還是有點太厚. Pork Wrap is made with finely ground pork mixed with corn starch. It can be used to make pork wrap wonton or pork wrap dumpling for hot pot. It is much better to roll the wrap to be very thin but it will take a fairly longer time to make. This time overall the wrap is still a little thick. 材料 Ingredients: 豬肉150克 Ground pork 150g 鹽半小匙 Salt 1/2 tsp 太白粉60克 Corn starch 60g 地瓜粉20克 Sweet potato flour 20g 太白粉擀皮用 Corn starch for rolling the wrap 白菜數片切塊 Cabbage for soup 腐皮適量 Tofu skins 乾洋蔥適量 Dried onion to season 鹽適量 Salt to season 內餡材料 Stuffing ingredients: 豬肉60克 Ground pork 60g 蒜泥1小匙 Chopped garlic 1 tsp 鹽適量 Salt to season 醬油1/8小匙 Soy Sauce 1/8 tsp 米酒1/8小匙 Rice Wine 1/8 tsp 紅糖適量 Brown sugar to season 白胡椒粉1/8小匙 White Pepper Powder 1/8 tsp 五香粉一點 Five Spice Powder to season 香油1/8小匙 Sesame Oil 1/8 tsp 作法 1. 把豬絞肉跟鹽, 太白粉跟地瓜粉放入食物攪拌機 Put the ground pork, salt, corn starch and sweet potato flour into the food processor 2. 開始攪打成團 Mix well to form a dough 3. 確定豬肉很細了 Make sure the pork is finely chopped 4. 撲上太白粉, 把肉團弄成團, 開始把肉團擀開 Spread some corn starch to the table, put on the meat dough. Start rolling out the dough to sheet 5. 要隨時補粉, 把肉團慢慢擀成薄片 Remember to add more corn starch from time to time. Slowly roll to form a sheet 6. 把邊切到, 比較正一點. 邊留下來分開處理 Slice out the side to make a rectangle sheet. Keep the side for later 7. 用擀麵條片一樣的方式, 用桿麵棍捲擀的方式慢慢壓薄成片 Same way to form a noodle sheet, wrap the sheet to the roller and slowly press out to a thinner sheet 8. 最後切成一片片的燕皮備用 Then cut the sheet into small meat wraps 9. 把肉餡用的豬絞肉,蒜泥放入調理機 Add the ground pork and garlic into the food processor 10. 繼續加入鹽, 醬油, 米酒, 紅糖, 白胡椒粉, 五香粉跟香油 Add the rest of the ingredients, salt, soy sauce, rice wine, sugar, white pepper powder, five spice powder and sesame oil 11. 用調理機混合過 Mix well with the processor 12. 拿一片燕皮, 在底上撲一點肉, 捲起, 把兩邊壓緊 Take a pork wrap, lay on some stuffing, roll up the wrap and press down the two sides to close 13. 全部包好. 剩下的燕皮留著做肉燕 Continue until the stuffing is finished. I have some pork wraps left for making pork wrap wontons 14. 煮一鍋水, 放入白菜 Boil a pot of water, add the cubed cabbage 15. 放入燕餃 Add pork wrap dumpling 16. 放入腐皮 Add tofu skins 17. 加入乾洋蔥跟鹽調味即可 Finally season with dried onion and salt
