Stuffed Zucchini, Grape Leaves & Tomato Stew Ingredients:10 zucchini-cored, 1 jar of grape leaves-drained & washed, 6 lb peeled whole tomatoes, 3 cups short grain rice-washed and rinsed, 1/2 cup vegetable oil, 1 bunch fresh cilantro- chopped, 3 heads of garlic-peeled and diced, 1 lb ground meat, 1 tsp safflower(optional), salt and black pepper. Stuffing: mix rice with 1/2 of the meat, oil, 1 1/2 tsp salt and 1/2 tsp pepper, and safflower. Stuff zucchini with stuffing half way full. Then with about 1 tsp stuffing, fill and roll each grape leaf, and then, with thread, wrap several leaves together. In 3 Tbs oil, brown remaining meat, add garlic and cilantro, keep for 1-2 min. Add 1/2 tsp salt and 1/4 tsp pepper. Divide into 3 equal parts. Here we will cook 2 ways, using the instant pot and a regular pot on the stovetop to see time difference and the steps. Start with a regular cooking pot, by adding 1/3 meat mixture, 1/2 amount of tomatoes and 8 cups water, bring to boil, & add 1 1/2 tsp salt and 1 tsp pepper. Add 1/2 amount of the grape leaf rolls, and cook covered for 90 min, before adding 5 stuffed zucchini for an additional 90 min. For instant pot, add half of the remaining tomatoes with 6 cups water, 1 tsp salt and 1/2 tsp pepper. Add remaining grape leaf rolls. Close and cook on high for 25 min. Following instant pot instructions, open carefully and add remaining zucchini, remaining amount of tomatoes, and 1/3 amount meat mixture. Cook for additional 35 min. As a bonus, I stuffed 2 green pepper as well with remaining rice stuffing. It took 10 min in the instant pot to cook. Serve hot and enjoy!
