Jackfruit is a tropical tree fruit grown in Asia, Africa and South America. It belongs to the same plant family as figs and mulberries. Under its thick, bumpy green rind is a stringy the texture of jackfruit is like meat, and for that reason, it is often considered the non-veg of vegetarians in my part of the world. The curry is also rich and spicy, like most of the non-veg North Indian curries. Have you heard of the Indian festival of colours, Holi? Jackfruit curry is as important as turkey is in Thanksgiving for this festival in my native state. It is a dish that qualifies as a home-cooked meal for special occasions Ingredients 1x2x3x • 500g Raw Jackfruit (Canned or fresh) • 5 Medium Potatoes • 3 Medium Onions, thinly sliced/chopped • 1 inch Ginger • 8 – 1o Garlic nos. • 1 Tsp Coriander seed • 1 Tsp Cumin seed • 2 Tbsp Kashmiri Red Chilli Powder (you can use less) • 1 Tbsp meat Masala Powder • 1 Tsp Turmeric Powder • Salt according to your taste. • 4 Tbsp mustard oil for frying (Jackfruit, Potato) • 2 tomatoes • 2 Small Red Chilli • 1 Tsp Cumin Seeds • 1 Black Cardamom • 3 green cardamoms • 4 – 5 cloves • 2 Bay Leaves • 1 Tbsp Fresh Coriander for garnish 1. Fry on medium flame till they look light brown and fried. It will take around 2 minutes. Remove it and keep aside 4. Cut potatoes into big cubes. I prefer four pieces of medium potato and 2 small ones. Fry till they look golden brown. It will take around 2 minutes. Do it on medium flame. Remove it to a plate after the potato is fried . 5. Take a pan. You can use the same pan/wok. 6. Add 4 tbsp oil to it. Heat it. 7. Add bay leaves, Cumin seeds, black cardamon, green cardamon, clove and dry red chilli to it. Let them crackle. 8. Take a grind jar add cumin seed, coriander seed, green chilli, ginger and garlic. a fine paste must be prepared. 10. At this time add all grind masala. Sauté it nicely till raw smell is gone. It will take another one two minutes. 11. Now add Kashmiri red chilli powder, turmeric powder, meat masala and salt. Mix everything well and sauté on medium flame. Add 2 tbsp of water to it. It will prevent your spices from sticking. 12. Sauté all spice mixes on medium flame for 5-6 minute. spend some time on Sautéing. Add one tbsp of water if you feel its sticking. 13. After the spice mix releases the oil, add Jackfruit and potato to it. Mix it nicely with the spice mix. 14. Sauté it on medium flame for 2 minutes. 15. Add two cups of water to it. 16. Let it cook for 5-6 minutes on slow flame. 17. Garnish with coriander leaves and serve with rice or bread. 18. Enjoy.
