Strawberry Mochi / Ichigo Daifuku Season 1 - Episode 9 [ 10~12 pieces ] [ Red Beans Paste ] Red mung beans - 100gm ( soak over night ) Crystal sugar - 50gm Salt - a pinch [ Mochi Dough ] Glutinous rice flour - 100gm もち粉 / Mochi ko Sugar - 50gm Water - 120cc [ Ingredients ] Strawberries - 5~6 pieces Potato or corn starch - some put into oven over 120℃, bake for roughly 5~6 minutes or stir fry with frying pan. [ Preparation ] 1. Put pre-soak red mung beans in the pot, pour in water over heat on. Keep boiling until mashes easily. 2. Throw away water, rinse in water, put the red mung beans back in the pot, add water & boiling until the beans is break. 3. Throw away the second boiled water, put the red mung beans back in the pot, add crystal sugar & salt over medium-low heat. 4. Smash the red mung beans with masher & pour into a container to cool down. 5. Combine all the [ Mochi Mixture ] ingredients into a bowl & mix well. 6. Put the Mochi batter into steamer, steam roughly 5 minutes take out & mix well. Put it back to steamer & steam for 3~4 minutes. 7. Remove the Mochi dough, stir well until shiny & smooth with wooden mallet. 8. Wrap the clean strawberries with red bean paste ( roughly 20gm ). 9. Scoop out Mochi dough ( roughly 42~43gm ) & place on top of potato starch. 10. Put some corn starch on your hands & shape each piece of Mochi dough into a flat circle. Dust off the potato starch with a brush. 11. Place the stuffing on to the Mochi dough, cover up & is done ~ ! [ Tips ! ] water for the first boiled contains a lot of astringency & should be replaced with clean water ! add some salt can make red mung beans palatable. can use an immersion blender ! can use your own way to heat the Mochi batter. if don't corn starch, can use potato starch or corn meal. Put into oven over 120℃, bake for roughly 5~6 minutes or stir fry with frying pan.
