After an indulgent festive period, we’re all probably looking for some inspiration for some healthier meals and sweet treats that we can cook at home. Tom shares his favourite healthier alternatives, which are packed with flavour and absolutely delicious. Why not try his turkey and beetroot burgers? Serves: 4 Ingredients: 4 x brioche burger buns Burger mince: 500g turkey mince 250g grated and beetroot ½ tsp ground cumin ½ tsp ground coriander 1 tsp chilli flakes 1 tbsp chopped coriander 50g fresh breadcrumbs Feta and mint slaw: ¼ red cabbage sliced ¼ white cabbage sliced 1x red onion sliced Handful of mint chopped 60g crumbled feta 2 tbsp mayo 1 tbsp Greek yoghurt Garnish: 1 beef tomato sliced 2 handfuls of watercress Method: To a large mixing bowl, a mix the mince, grated beetroot, cumin, both coriander salt and breadcrumbs, then with your hands mix the ingredients together until you have a firm ball, then divide into four balls, next up shape into burger patties and then pop in the fridge on a tray until needed. Now slice all of the vegetables for the slaw and sprinkle with a little salt to slightly cure them and draw out a little excess water for 10 minutes. Next add the salted vegetables to a clean kitchen cloth and squeeze out any excess moisture. Then return to a mixing bowl and bind with the mayo, gherkin, feta and mint, keep to one side. To cook the burgers lightly oil a pre heated frying pan on the hob, once hot, lay on the burgers and fry for 6 minutes each side to cook through. Once the burgers are cooked remove them from the heat and rest on a warm plate for 5 minutes. Toast the burger buns and then layer up with the burger, slaw tomato, gherkin and watercress, pop on a lid and serve. #TomKerridge #TurkeyBurgerRecipe
