Restaurant-Style Gobi Manchurian | Super Crispy and Delicious Cauliflower | Step-by-Step Tutorial

INGREDIENTS: FOR FRY: Cauliflower- 1 medium size Maida -250 g Cornflour- 250g Pepper- 1tsp Kashmiri red chilli powder- 2tsp Salt as required FOR THE MANCHURIAN SAUCE: Onion- 1 Large size Garlic - 15 no’s Ginger- 2 inch Spring Onions (white base) - 1/2 cup Spring onions (green tops) - 1 cup Capsicum - 1/2 medium size White pepper- 1.5 tsp Coriander stem - 1/2 cup Green chilli - one medium size Soya sauce- 2 tsp Red chilli paste - 1 tsp Green chilli paste- 1 tsp Tomato ketchup- 2 tsp Cornflour - 2 tsP Fried crispy cauliflower Salt as required FOR GARNISH: Coriander leaves Spring onions PREPARATION PROCESS : In a large bowl, mix maida, cornflour, kashmiri red chilli powder, pepper, and salt. Add a little water at a time and mix until you get a smooth batter that coats the florets evenly, the batter should not be too thick or too runny. Dip the cauliflower florets into the batter, ensuring they are evenly coated. Heat oil in a deep frying pan over medium heat. Once the oil is hot, carefully drop the battered cauliflower florets into the oil, a few at a time. Don’t overcrowd the pan. Fry until they are golden and crispy (about 3-4 minutes),Remove them with a slotted spoon and place on a strainer to drain excess oil. In another pan, heat 2 tablespoon of oil over medium heat. Add the onions and sauté until they turn translucent. Add chopped ginger, garlic, coriander stem, spring onions, capsicum and green chilies. Sauté for a minute or two until fragrant. Add soy sauce, red chilli paste, green chilli paste and tomato sauce, Stir to combine, then add white pepper and salt to taste. Bring the mixture to a simmer and add the cornflour slurry. Stir well until the sauce thickens and becomes glossy. Once the sauce is ready, add the fried cauliflower florets into the pan. Toss them gently in the sauce, ensuring that all the florets are coated evenly. Cook for another 2-3 minutes so the cauliflower soaks up the sauce. You can add a little water if you want a thinner consistency. Garnish with chopped coriander leaves. Serve the Gobi Manchurian with fried rice or noodles.
