LAY HO MA (how's it going in Cantonese)! Creative rice recipes are always on my mind! Join me in this episode and learn how to make a delicious one pan chickpea orzo pilaf recipe tonight! INGREDIENTS: 400ml canned chickpeas 1 tsp + 2 tbsp olive oil 1 tsp smoked paprika pinch + 1 tsp salt pepper to taste 1 cup basmati rice 1 onion 3 pieces garlic 1/4 cup almonds 1/2 cup orzo 1 tsp sweet paprika pinch of oregano 1 1/2 cups veggie stock 1/4 cup raisins few sprigs parsley DIRECTIONS: 1. Preheat the oven to 400F. Rinse and drain the canned chickpeas and toss them in a mixing bowl with 1 tsp olive oil, the smoked paprika, pinch of salt, and pepper to taste. Spread onto a baking tray lined with parchment paper and bake for 15mins 2. In the meantime, rinse and drain the basmati rice and set aside. Dice the onion and finely chop the garlic 3. Heat up a sauté pan to medium heat. Coarsely chop the almonds and toast them in the dry pan for 3-5min, then set aside. Add 2 tbsp olive oil into the pan followed by the onions and garlic. Sauté for 2-3mins 4. Add the orzo and sauté for 3-4mins. Then, add 1 tsp salt, the sweet paprika, and a pinch of oregano. Give the pan a stir, then add the basmati rice. Sauté for another minute or so, then add the veggie stock 5. Turn the heat to medium high. When the water begins to boil, give the pan a good stir and turn the heat to medium low. Cover and cook for 15mins 6. Add the toasted almonds, raisins, and roasted chickpeas to the rice and fluff with a rice paddle or fork.
