Early this morning, Ah Xia went with her parents to her aunt’s house to pick chayotes. The chayote vines there were full of fruit, growing densely all over the trees. We filled a whole bag with tender chayotes, while the old ones were fed to the chickens. After picking the chayotes, Aunt also took us to dig up some Chinese yams and small guavas, saying they were perfectly ripe and ready to eat. Back home, we started processing the sponge gourds. We peeled them clean, cut them into thin strips, and salted them to draw out the moisture. Then we mixed in ginger slices, bird’s eye chilies, Sichuan peppercorns, and rock sugar, letting it sit overnight to absorb the flavors. The pickled sponge gourd turned out crisp and tasty.
