This is a mandatory recipe for Ugadi, which is celebrated as a new year by the Telugu and Kannada speaking people & Gudi Padwa by the people of Maharashtra. This sweet flatbread is called as Puran poli in Maharashtra and paruppu boli (poli) in Tamil Nadu. STEP 1: Outer Dough(Kanaka) preparation:(for 4-5 holiges) Ingredients: 1 cup maida ¼ tsp turmeric ¼ tsp salt 4-5 tsp oil Water for kneading(approx ¾ cup) Method: Mix maida,salt,turmeric along with required amount of water & knead a soft dough. cover it up with oil & allow it to rest for 3-4 hrs. STEP 2: Hoorna or stuffing: Ingredients: 1 cup washed & soaked channa dal(30 mins) 1.5 cup powdered jaggery(can increase or reduce as per your liking) 1 cup fresh grated Coconut 4-5 Green Cardamom crushed ¼ tsp nutmeg powder ¼ tsp ginger powder(optional ) Method: 1.Pressure cook dal with 2.5 cups water for 4-5 whistles. 2.Once pressure is released, strain the channa dal and retain the dal water for obbattu saaru or rasam if you want. 3.Transfer the cooked dal to a pan, add jaggery & cook on medium heat until jaggery dissolves. Add grated coconut, green cardamom powder, nutmeg ,ginger powder & cook until the mixture thickens yet moisty(not too dry) 4.Trasfer the mixture onto a plate & allow it to cool down. Once cooled,add it to mixie & grind in batches without adding water to form a smooth paste. 5.Start making Hoorna balls. 6. Knead the outer dough & pinch a ball sized dough & keep aside. STEP 3:Making of Holiges: Items Required: Rolling pin Butterpaper/Baking sheet/banana leaf Oil/ghee Method: 1. Divide the dough into 4-5 roundels. Make 4-5 ball sized hoornas. 2. Apply oil onto the butterpaper or banana leaf, place the dough and flatten it with your palms. Then place the hoorna on the dough & pinch the sides & cover the hoorna with dough. Then flatten it with your palm. Then using a rolling pin greased with oil, slowly roll from centre to the corner untill desired thickness is achieved. 3.Then put the rolled holige onto a medium hot tawa(the side opposite to the butterpaper should touch the tawa) Slowly & carefully lift the butterpaper starting from one corner to th other end. 4.Cook on both sides applying oil or ghee.
