Wrap in aluminum foil. Place in the oven and bake for about 1 hour or until fork tender. Drizzle a small amount of oil unto the shrimp. Season the shrimp with salt pepper, onion, and garlic powder, cajun seasonings paprika, seafood seasoning. Combine the seasoning with the shrimp. Prepare the bacon as preferred. Using a medium-sized skillet add the shrimp and cook fully on both sides. Remove and set aside. Using the same pan, add the butter. Add the bell peppers, and the spinach and sauté until the veggies are softened. Add heavy cream and combine. Add paprika, cajun seasoning, garlic powder, onion powder, cajun seasoning, and seafood seasoning. Add cheese blend, parmesan cheese, and mix. Add some of the shrimp back to the pan along with bacon. Remove the top of the baked potato. Remove and separate the potato from the skin. Add the potatoes to a bowl, add butter, salt, pepper, sour cream or cream cheese, shredded cheese, heavy cream, bacon, and combine. Add chopped chives, and combine. Stuff the potato skin with shrimp sauce, mashed potato, shrimp sauce, shrimp, cheese, bacon, and fresh chives. Place the baked potato in the oven for about 5 minutes until the cheese melts.
