Lau Tarakari (Odia) / Lauki Ki Sabzi Recipe, is a healthy curry recipe made with bottlegourd , split chickpeas and spices. Lauki is a common vegetable in Indian kitchen. It is a versatile vegetable that can be used in preparing variety of savory and sweet dishes. In indian cooking, lauki is often combined with various lentils to make wonderful dishes. Lauki is placed a special place in indian ayurvedic medical system due to its health benefits. It is very light on digestive system. Lauki juice is an excellent remedy for excessive thirst caused diarrhea. Cooked lauki is cooling , calming and makes you relax after eating. This vegetable is quite blend and test less. So, most of the people avoid to eat it. But, with some spices , lentils you can make this simple dish very very tasty. To make this recipe I recommended to soak the split chickpeas / chana dal for sometime (at least for 2 hour) to soften them and also make sure the chana dal is cooked properly. This lauki ki sabzi can be served with roti , chapati , parathas or with steamed rice. Servings : 2-3 Ingredients: ------------------- 1. Diced Bottlegourd / Lauki / Laau - 1 or 2 cups 2. Diced Potato - 1 or 1 cup 3. Soaked Split chickpeas / Chana dal / Buta dali - 1 cup (soak at least for 2 hours) 4. Soaked Soybean - 1/2 cup 5. Sliced Tomato - 1 6. Sliced Onion - 1 7. Ginger , Garlic and Green chili paste - 1 tsp 8. Chopped Cilantro / Coriander Leaves 9. Bay Leaf - 1 10. Dry Red Chili - 1 11. Panch Phoron / Panch Phutan - 1 tsp 12. Turmeric Powder - 1 tsp 13. Red Chili powder - 1 tsp 14. Coriander Powder - 1/2 tsp 15. Garam masla - 1/2 tsp 16. Salt (as per taste) 17. Water - 1 glass 18.
