BeydaKitchen 🍴 Looking for a quick and delicious baked pasta recipe? 🍆🍝 Follow this step-by-step guide to make cheesy baked eggplant and ground beef pasta perfect for family dinners! 🍆 Baked Eggplant & Meat Pasta Ingredients: • 1 onion • 3 eggplants • 1 green pepper • 1 carrot • 100 g pasta • 500 g ground beef • 100 g Parmesan cheese • 100 g mozzarella cheese • 1 cup tomato juice (or tomato puree) • 5 g each of: salt, black pepper, white pepper, turmeric, onion powder, chili flakes (Pul Biber), and garlic powder • Olive oil ⸻ Instructions: 1. Grate the onion. Then grate the green pepper and carrot as well. 2. Sauté the grated onion with the ground beef, vegetables, and all the spices until fragrant and fully cooked. 3. Bring water to a boil, add salt, and cook the pasta until tender. Drain and set aside. 4. In a pan, cook the tomato juice with olive oil and a little spice until it thickens and develops flavor. Add the drained pasta and mix well. 5. Peel the eggplants and slice them lengthwise into strips. Sprinkle with salt and let them sit to remove bitterness. 6. Arrange the eggplant slices on a baking tray, drizzle with olive oil, and bake at 180°C (350°F) for 30 minutes. 7. Grease a baking mold with olive oil and arrange the baked eggplant slices around the sides in a circular pattern. 8. Add a layer of pasta, sprinkle Parmesan cheese, then add a layer of the meat mixture and mozzarella cheese. Repeat the layers as desired. 9.
