Prepare all toppings. Thinly slice red onions. Rinse brown mushrooms and cut in half, horizontally. Thinly slice romaine lettuce and set aside in mixing bowl. Slice half an avocado along with 1 kumato tomato. Rinse and dry 1/2 cup of alfalfa sprouts. 2. Prepare Beyond Meat Burger by sprinkling salt and fresh cracked pepper over the patties. Heat non stick pan on medium and add 1 tbsp of olive oil. Sear both sides for 2 minutes until exterior is crispy and golden brown. Set aside on plate when done. 3. Heat grill over medium high and lay down mushrooms. Drop olive oil over each mushroom and grill for 2 minutes on both sides. Slice two pieces of bread and brush with olive oil. Once mushrooms are done, grill bread on both sides for 2 minutes each side or until grill marks are showing. 4. Dress romaine lettuce by adding 1 tbsp of olive oil, half squeeze of lemon juice, and toss. 4. To assemble, place mayonnaise and ketchup on each piece of bread. Place burger patty on mayonnaise side. Stack mushrooms, onions, avocado, sprouts and dressed lettuce of the top. Place toothpick on both sides of bread and cut in half to serve. Enjoy!
