We present to you the simple recipes of Kiyomi Mikuni, the owner and chef of the Mikuni hotel, a French cuisine restaurant in the Yotsuya district of Tokyo. ▼RECIPE 【Ingredients】 for 4 persons 6 chicken wings [A] 1/2 teaspoon salt 1 teaspoon ground cumin 1 teaspoon oregano 2 + 2 tablespoons of coconut oil 1 clove garlic 1/2 onion 1/2 red pepper 1 eggplant 2 bell peppers 300g long-grain rice [B] 2 teaspoons ground cumin 100g canned tomatoes 1 tablespoon tomato puree 【Preparation】 ・ Cut the vegetables. ・ Wash the rice and drain. 【Procedure】 1. Season the chicken wings with [A]. Heat 2 tbsp coconut oil in a fry pan, and brown the wings on both sides. 2. Add the onion, pepper, eggplant, and garlic, and sauté them. 3.Add the other 2 tbsp of coconut oil, then add [B] and sauté more. 4. Add the drained rice and sauté briefly. Season with salt and pepper. Arrange the chicken wings on top and add water until everything is 8/10 covered. Cover the pan and bring to a boil. Then simmer for 10 minutes.
