How To Make Soft and Chewy Coconut Desserts As someone who loves eating anything with coconut or coconut milk, these soft, gooey and moist little goodies are undeniably suits your taste buds. These micro cup cakes are slightly distinctive because it’s Filipino coconut macaroons. Quick and easy to make and utterly luscious. Perfect for afternoon tea or coffee break. One of the essential ingredients for this recipe is condensed milk. It gives the rich and creamy with a sweet flavor and chewy consistency. In this recipe I added up lemon zest to give a punch of tanginess in each bites. Ingredients: 100 g melted butter (60 g for batter mixture | 40g for brushing) 3 raw eggs ¼ cup of brown sugar 1 can (395g) condensed milk 1 tsp vanilla extract 2 ½ cups or 250 grams of desiccated coconut lemon zest (half to 1 lemon grated zest) 24 mini cup cakes cases Procedure: Melt 100grams of butter. Lay all the ingredients on the work surface. Set aside. In a large mixing bowl. put the eggs.. beat the eggs… add ¼ cup of brown sugar. Mix well… add 1 can or 395 grams of condensed milk. Add 1 teaspoon vanilla extract. Use a balloon whisk to whisk together until well combined. Add the ¼ cup or 60 ml of melted butter. Put in the 2 ½ cups or 250 grams of desiccated coconut. Zest half of a lemon by grating the skin. Add in to the mixture. Blend until the desiccated coconut and the mixture is completely mixed. Set aside… Meanwhile, Preheat the oven for 240°C. line up the mini muffin cases in the cup cake pan. Put a little over of 1 tablespoonful of the cake mix batter. You can make 24 pieces of macaroons. Bake them for about 15-18 minutes or until golden, in 180°C. Cool for 5 minutes in the pan, then transfer to a wire rack to cool completely. Lightly brush the top of each macaroons with melted butter. The macaroons can be served immediately or put them in a container with lid for up to a week but it still depends on climate you have. But in our household there’s no climate. Because I can finish them in 1 sitting.
