Here's my favorite super moist, soft and fluffy CARROT CAKE 1.5 cups neutral oil 6 eggs 1 Tbsp vanilla extract 675 g sugar 450 g flour 1 Tbsp baking soda 1 Tbsp cinnamon 1 tsp nutmeg (optional) 560 g carrots 3/4 cup pineapple 3/4 cup shredded coconut 3/4 cup chopped walnuts Bake at 325 F for 30 to 40 minutes. CREAM CHEESE FROSTING 225 g butter, softened, room temperature 225 g cream cheese, cut into cubes, softened, room temperature 180 g powdered sugar 1 tsp vanilla extract 1. Using paddle attchment, whip butter until ligh and fluffy. 2. Add cream cheese, one cube at a time until well incorporated 3. Add powdered sugar, adjust the sweetness by adding more or less powdered sugar 4. Add vanilla extract PERI PERI SPICE MIX 10 g Chili flakes 20 g salt 20 g garlic powder 15 g onion powder 15 g black ground pepper 5 g oregano 40 g paprika 20 g cayenne pepper Lemon peel (1/2 lemon) Zest of 1 lime cooking oil I tell stories about my life as a cook, a home baker and a pastry chef in Canada.
