Hà takes me to the city of Sa Đéc to find a rice starch producer and also find a good source for Hủ Tiếu noodles. At the rice starch village we see that the leaves of the hibiscus plant cause all the parts of the rice except for starch to sink to the bottom of the tank so the starch can be drained off and dried. Once dried it can be rehydrated to make many different dishes that call for a gelatinous or bready ingredient. We see two such dishes here. Then we continue to explore the city of Sa Dec to find a source for the Hu Tieu noodles and when Ha chooses the best color the cooks at her restaurant make a good vegetarian dish with the noodles. Finally I give my take on vegetarian cuisine and what I like and dislike about the industry.
