Here is our version of a Mauritian style Combination Stir Fry Noodle | Mine Frit Special 🇲🇺 ~ Recipe ~ Yield: 2 serves Preparation Time: 30 minutes Cook Time: 10 minutes INGREDIENTS (Stir Fry Noodle) Fresh Noodles / Egg Noodles 500g Chicken Thigh / Breast (Sliced) 125g Prawns 100g (12 units) Chinese Sausages / Lapcheong 1 (30g) Green Cabbage 100g Carrot 75g Garlic Chives 50g Fish Sauce 2Tbsp Dark Soy Sauce 1tsp Salt to taste Pepper to taste Cooking oil METHOD (1) In a wok or frying pan, add some oil on medium high heat then stir fry the Chicken, Prawns and Chinese Sausages. Season with salt and pepper (to taste), then stir fry until the meats are fully cooked (2 - 3 minutes). Set aside. (2) In the same wok/ frying pan, add some more oil then add the Carrot and Green Cabbage. stir fry for 30 seconds. (3) Add the noodles then season with the Fish sauce, Dark soy sauce, Salt and Pepper. Stir fry for 2 minutes on medium high heat making sure the noodles does not stick to the wok/ pan. (4) Finally, add the Garlic Chive and stir until well combined. Then add the meats and cook for 15 seconds on high heat to add a charred flavour to the noodles! (5) Garnish with some omelette and serve with Garlic Vinegar dressing and chilli paste, ENJOY! INGREDIENTS (Garlic Vinegar Dressing) Brown Vinegar 25ml Warm Water 40ml Garlic (Minced) 1 clove Chilli (Chopped) 1 Salt 1tsp Sugar 2tsp METHOD Mix all the ingredients together!
