This is my delicious twist on Goan Stuffed Brinjal 🍆✨ Fresh brinjals are cut into two halves and carefully scooped out. The brinjal pulp is cooked with finely chopped carrots and potatoes along with aromatic spices to create a flavour-packed stuffing. The mixture is then filled back into the brinjal shells, coated in egg and crispy breadcrumbs, and baked until golden and crunchy on the outside while staying soft and juicy inside. It’s crispy, comforting, and absolutely bursting with flavour! 😍 Perfect as a side dish, starter, or even a light meal. Serve it hot and enjoy that beautiful crunchy top with the soft, tasty filling inside ❤️ If you enjoyed this recipe, don’t forget to LIKE, SHARE & SUBSCRIBE for more homemade Goan-style recipes! 🌶️ Goan Recheado Masala Recipe 🛒 Ingredients: • 8–10 dried Kashmiri red chillies (adjust for spice) • 5–6 garlic cloves • 1 inch ginger • 1 tsp cumin seeds • ½ tsp black peppercorns • 4–5 cloves • 1 small cinnamon piece • 1 tsp mustard seeds • 1 tsp turmeric powder • 1 small marble-sized ball of tamarind • 2–3 tbsp vinegar (traditionally Goan coconut vinegar) • 1 tsp sugar (optional but recommended) • Salt to taste ⸻ 👩🍳 Method: 1. Remove seeds from the dried red chillies and soak them in warm water for 15–20 minutes. 2. In a mixer jar, add soaked chillies, garlic, ginger, cumin, pepper, cloves, cinnamon, mustard seeds, turmeric, tamarind, salt, sugar, and vinegar. 3. Grind to a smooth, thick paste. Add very little water only if needed. 4.
