They let you mess with the game in ways that I haven't seen before such as throwing Bowser off the edge, having flying jaxis, pushing things across the kingdom, and so much more! Some of these glitches are beginner friendly, with others being very advanced so whatever your skill level is there's something for you here! If you're just starting out, then I would recommend the Jaxi glitch in Sand kingdom, and for experienced players I would recommend either the Bowser glitch in Moon or the uproot glitch in Wooded.
