Perfect when you want soft, fluffy idlis in under 30 minutes! 📝 Ingredients (Serves 3–4) 1 cup rava (sooji / semolina) ½ cup curd (yogurt) ½ cup water (adjust as needed) 1 tsp salt 1 tsp sugar (optional) 1 sachet (5 g) Eno fruit salt (plain or lemon flavor) 1 tsp oil (for greasing) Optional tempering (for extra flavor): 1 tbsp oil ½ tsp mustard seeds 1 tsp chana dal 1 tsp urad dal 1–2 green chilies (finely chopped) Few curry leaves 👩🍳 Step-by-Step Method 1️⃣ Prepare the Batter In a bowl, mix rava + curd + salt + sugar. Add water gradually to make a thick batter (idli batter consistency). Rest for 10–15 minutes (rava absorbs moisture). 2️⃣ Optional Tempering Heat oil, add mustard seeds. Once they splutter, add dals, chilies & curry leaves. Pour into the batter and mix. 3️⃣ Add Eno (Important Step!) Grease idli plates and heat water in the steamer. Just before steaming, add Eno to the batter. Sprinkle 1–2 tsp water over it. Mix gently in one direction. Batter will become frothy. 4️⃣ Steam Immediately pour batter into idli moulds. Steam for 10–12 minutes on medium flame. Insert a toothpick — if clean, idlis are done. Rest 2 minutes before removing. 🍽️ Serve With Coconut chutney Sambar Tomato chutney 💡 Tips for Super Soft Idlis Do not overmix after adding Eno. Steam immediately after adding Eno. Batter should be thick but pourable. Use fresh Eno for best results
