IMPROVING LOKCHING: ENRICHING TRADITIONAL STREET FOOD THROUGH IMPROVED FORMULATION - Lokching is a popular local street snack made from blended fish shaped into small pieces, skewered, and cooked. Children especially enjoy it for its taste and fun shape. However, the traditional version has a strong fishy smell and lacks important nutrients like vitamins and minerals. This study aimed to make a tastier, chewier, and healthier version of lokching by adding vegetables to boost its nutritional value, especially for children. The improved recipe includes minced fish, flour, treated vegetables, and seasonings. The mixture is shaped into balls, blanched in hot and cold water, skewered, and chilled. It can be eaten immediately or reheated in less than a minute using a microwave, grill, or pan. This new lokching is affordable, easy to produce in large quantities, and provides a healthier snack option for kids. A taste test with 60 people using a 7-point scale showed that Variation 2 (with vegetables and corn flour) was the most liked. It was rated highest for its softness, chewiness, and appearance, making it the top choice among the three versions tested.
