Manti/mantu is a delicious meal option that is very popular in Afghan and Turkish cuisine. These tender dumplings are usually filled with meat or lamb and many other filling options and are served with a garlic yogurt sauce and a tomato paste sauce. Apart from tasting delicious, you can also make them look very appealing. My spinach manti platter looks incredibly beautiful with bright vibrant colors. It was almost too hard to devour this beautiful platter. Spinach Manti from MEK For spinach wraps: A small bunch of fresh spinach- blanched and then pureed We need 70g of the spinach puree 2 cups all-purpose flour 2 tsp olive oil ½ tsp salt 1 whole egg 1 egg yolk For the meat filling: 1 lb ground beef 1 small onion, finely chopped Salt and black pepper ½ tsp dried Italian herbs ½ tsp paprika For the white sauce: 2 cups whole milk yogurt 1 large garlic clove, Paste Salt and some dried mint For the red sauce: 2 tbsp butter 2 tbsp tomato paste Paprika ⅓ cup water Some extra melted butter for drizzling on top Gather the ingredients for the spinach wraps. Add to the bowl of a food processor and make a tight dough. Cover it and rest it for 30 minutes at room temperature. Then divide the dough into four parts. Use a pasta roller to make your sheets. Combine the ingredients for the meat filling in a bowl. Mix them all well and set aside for filling in the manti wraps. Make your white yogurt sauce by whisking together the given ingredients for it. Prepare the red sauce by frying the tomato paste in the butter. Add some paprika to it and water. Mix it till it's all smooth. Fill your prepared and cut manti wraps with meat filling. Shape the dumpling using some water to close the edges. Refer to the video for how to shape it. When all the mantis are filled, let them stand for 10 minutes- covered. Then boil a pot with water in it. Add salt to it. Add dumplings to the boiling water, just a few at a time, and boil them until cooked to your desired preference, al dente or a bit more. Cooking time should range from 8-10 minutes. Drain them and serve them over the yogurt sauce and the tomato sauce. Layer them, however, you want it.
