Loving the combo I put together most recently: diced sweet potatoes, zucchini, and mushrooms (toss in olive oil & whatever seasonings you like - bake 20 min. at 410, tossing halfway)... then I have this with some quinoa and my protein this week is shrimp. Really tasty!
