Sharing my pandan donut recipe with coconut glaze. The donuts are baked and offer such a lovely pandan flavor. Additionally these cake donuts are not as sweet to balance with the sweetness from the glaze. This is an easy recipe and the pandan juice can be made in advance. A couple tips to remember: Don't over mix batter - over mixing will result in a firmer texture. Don't over-bake - check the donuts for doneness at the 10 minute mark if you are using silicone molds or 8 minutes if you are using a metal donut pan. Grease donut molds/pans liberally - this will help the donuts come out of their molds easily. Coconut milk - use the full fat Thai kind that you cook with. Do not use the drinkable kind that you find in the plant-based milk section. Food coloring is optional - I used a tiny drop of gel food coloring to get that pistachio green color. Enjoy! Recipe: Yield = 12 donuts Silicone donut molds (you can find it on amazon) DRY INGREDIENTS 2 cups of all purpose flour (240 grams) 1 tsp baking soda (7 grams) 3/4 tsp baking powder (3 grams) 1/2 tsp salt (3 grams) WET INGREDIENTS 2 tablespoon of melted butter (28.35 grams) 1 egg 1/4 cup packed brown sugar (55 grams) 1/4 cup granulated sugar (50 grams) 1/2 cup full fat coconut milk (118 ml) - for best results, use a Thai brand such as AroyD 3/4 cup pandan juice (177 ml) - see separate note on how to make pandan juice. Pandan juice - cut 7-8 frozen pandan leaves into 1 inch strips and blend together with 3/4 cup (177 ml) of water. Pour the pandan juice through a fine mesh strainer to remove pandan leaf fibers. GLAZE: 3/4 cup powdered sugar (85 grams) 1 tablespoon melted butter (14.17 grams) 3 tablespoons of full fat coconut milk (45 grams) 1/4 tsp salt (1.5 grams) Optional topping: 1 cup of regular or toasted coconut flakes to sprinkle on top Pre-heat oven to 350 degrees F (177 C) In a large mixing bowl, whisk together dry ingredients. In a medium mixing bowl, whisk together wet ingredients. Add wet ingredients to the dry ingredients and mix together until ingredients are incorporated (don't over mix)...batter should be thick. Pour batter in a large zip lock bag or piping bag and cut tip of bag. Pipe into your well greased donut pan or silicone molds and fill mixture to 3/4 of each donut cup. Bake for about 10-12 minutes - do not over bake to prevent dryness! Insert toothpick into donut. If the toothpick comes out clean, it is done. Let the donuts cool before removing from the pan or silicone molds. To glaze: In a small bowl, sift powdered sugar to remove lumps, add the melted butter, coconut milk and salt and mix until smooth. Dip the top side of donut into the glaze. Optional: Sprinkle additional coconut flakes.
