RECIPES: BANANA MUFFINS (made 14 muffins) 3 mashed bananas 1.5 cups flour 1 tsp cinnamon 1 tsp baking powder ½ tsp baking soda ½ tsp salt ⅓ cup sugar (maple syrup, agave, honey) ½ cup applesauce 🔹Mash bananas in a small bowl 🔹Mix dry ingredients in a large mixing bowl 🔹Add all wet ingredients and stir 🔹Bake in silicone muffin tins at 400 for 18-25 minutes SPLIT PEA SOUP 1lb split peas 6 carrots 1 bay leaf ½ TB paprika ¼ tsp thyme ⅛ tsp pepper 6 cups broth 🔹Chop carrots, rinse split peas 🔹Place all ingredients in instant pot and set to manual high pressure for 15 minutes 🔹Allow at least 10 minute natural release 🔹Remove bay leaf before serving! TOFU VEGGIE “FRIED RICE” 1 block tofu 4 cups cooked and cold rice (cook according to package) 1 can peas 1 can corn ¼c soy sauce Seasonings (I used salt, pepper, onion powder, garlic powder, paprika to taste) 🔹Mash tofu and cook in a large pan over medium heat until water is cooked off 🔹Add drained peas and corn 🔹Add seasonings and soy sauce and cook a few more minutes 🔹Add in your rice and heat through EASY BREAD: from flourishing miranda 3 cups flour 1.5 cups water, microwaved for 30 seconds ½ teaspoon of active dry yeast 1 teaspoon salt 🔹Mix and cover with a towel to sit all day or all night (recommend at least 6 hours) 🔹Bake at 450 for 30 minutes with some sort of top on, remove top and cook for another 15 minutes
