This Meze has a distinct, spicy, and savoury taste. The mellow flavour is between fresh salad and salsa cruda… May be both in one dish!! It is a must-have Meze and dip on the Rakı Table along with seafood or kebap & and meat-oriented menus! _____________________________ INGREDIENTS The Spicy Sauce : ½ tbsp salt ½ tbsp ground isot (Urfa) pepper ½ tbsp ground sumac 1 tbsp paprika 1 tbsp hot red pepper flakes 1 tbsp dried mint 2 tbsp pomegranate molasses 2 tbsp tomato paste 2 tbsp pepper paste 6 tbsp olive oil ½ lemon’s juice The Vegetables: 4-5 medium-sized tomatoes 1 onion 4-5 garlic cloves 3 red capia peppers ½ bunch of parsley _____________________________ DIRECTIONS THE SPICY SAUCE Mix the ½ tbsp of salt, ½ tbsp of ground sumac, ½ tbsp of dried mint, 1 tbsp of paprika, 1 tbsp of hot red pepper flakes, the juice of ½ lemon, 2 tbsp of tomato paste, 2 tbsp of pepper paste, 1 tbsp of pomegranate molasses, and 6 tbsp of olive oil in a bowl Thoroughly whisk the ingredients, cover with a lid and set aside THE VEGETABLES Wash the vegetables Dice the onion, mince the garlic cloves and set aside Discard the stems and the seeds of capia peppers, dice them and set aside Peel the tomatoes, discard the seeds and the jelly bits; then, dice the tomatoes and set aside (!) This recipe requires minimum vegetable juice to achieve a proper consistency; you can use these juicy tomato pieces in any other recipe) Mince the parsley and set aside MINCING & MIXING Traditionally, mincing is done by a special knife called “SATIR” (Mincing Knife) to get a very fine but grained texture However, you can instead use a food processor at the small expense of “desired texture” Start with mincing the diced onions, then the diced red peppers, tomatoes, and finally the minced parsley You may appreciate the help of someone with stronger hands to breeze through this process! Once the vegetables are cut down to a fine grained and homogenous texture, add them into the Spicy Sauce and mix the ingredients until become a grainy spread Cover the bowl with a lid and keep the EZME in the fridge until serving SERVING Serve the ACILI EZME cold You can add lemon slices and additional fresh parsley for decoration Afiyet olsun!! _____________________________ Love the comforting warmth of HOMEMADE FOOD?
