I'm making a pumpkin curry soup with my new spices from Thailand and some Christmas finds at World Market; including a beautiful spice box. Hope This Helped, Chyna 🫶🏽 TIME STAMPS: 00:00 preview 00:12 World Market Finds 04:36 Filling my spice box 06:52 Pumpkin Curry Soup Recipe 18:03 Halloween 18:58 Fragrance Giveaway Pumpkin Curry Soup Recipe: 1-2 tbsp oil (whichever you perfer, coconut, olive, avocado) 1/2 medium yellow onion, finely chopped 2 tsps minced garlic 1 tsp teaspoon salt (add more or less to taste) 1/2 tsp pepper 1 small pumpkin (pie pumpkin or squash or 2 cans of pumpkin puree) my pumpkin yielded 32 oz of pumpkin 3 cups broth of choice (i used chicken bouillon) 3 tsps curry powder 1 tsp ginger powder 3/4 cup coconut milk 1-2 tbsp of honey or sweetener of choice (I used 1 tbsp of raw honey & 1 tbsp od brown sugar because I didn't want to waste my good honey, LOL side note: honey shouldn't be heated, it destroys the beneficial properties 1tsp crushed red pepper (optional) A pinch of both ground allspice & cloves optional but I would add it if you enjoy those flavors Instructions: Heat oil over medium-high heat and cook the onions for about 5-7 minutes (or until soft). Add in the minced garlic, salt, and pepper, then stir for another 2-3 minutes. Stir in the pumpkin and broth. Cook for 7-10 minutes, stirring occasionally. Add in the curry powder and ginger, then cook for another 2-3 minutes. Stir in the coconut milk, sweetener of choice, and crushed red pepper now or later when serving (optional) and cook about 5 more minutes.
