This is a great side dish that works well with just about any type of protein!! Its definitely a favorite at our house that's for sure!! When you give these a try let me know what you think about them in the comments. Cook Temp: 350º What you need: 4 Baking Size Potatoes 4 oz. Cream Cheese (softened) 1/2 Stick of Butter 1/3 Cup Heavy Cream 1 Cup Shredded Cheese 1 Can Lump Crab Meat (drained) Oil Salt Pepper Process: Coat potatoes in oil and season heavy with salt and pepper. Put directly in the grill and cook for about 1.5 hours, turn and rotate as needed. Once the potatoes are thumb tender take them off of the grill and allow them to cool about 20 minutes. Next you want to slice the potatoes so that it looks kinda like a canoe and take a spoon to scoop out the insides; add the potato guts to a bowl. Now add in the cream cheese, butter, heavy cream and mix well. Then mix in the cheese until it is blended and about the consistency of mashed potatoes; gently stir in the crab meat. After it is all mixed up stuff the mixture back into your little potatoes canoes and top with a little extra shredded cheese. Place the stuffed potatoes in a skillet or foil pan and put them back on the smoker for about another 20 minutes or until the cheese is melted.
