Here's how you make my ultimate caprese sandwich. Ingredients: Cherry Tomatoes Garlic Olive Oil Fresh Rosemary Fresh Thyme Pine Nuts Fresh Basil Parmesan Cheese Crusty Italian Bread Arugala Burrata Balsamic Glaze Salt/Pepper Step 1: Roast the Tomatoes Get your oven preheating to 330º. Into an oven-safe dish add your cherry tomatoes, whole cloves of garlic, some good olive oil, fresh thyme and rosemary, and salt/pepper. Let those roast for at least a half hour. Step 2: Make Your Pesto Place a pan on your stove and roast your pine nuts over low-medium heat. Don't let them burn. Into a food processor add your fresh basil, garlic, olive oil, salt, freshly-grated parmesan cheese, and your toasted pine nuts and blend. Step 3: Assemble Your Masterpiece Cut your Italian loaf down the middle, drizzle with some olive oil, and pan fry until it's nice and crispy. Add your pesto, top with arugula, burrata, and you roasted tomatoes and garlic. Finish off with a drizzle of balsamic glaze, olive oil, and a little salt.
