This cake should be done by 1 hour 50 minutes max. at 300F. However, always use your skewer or toothpick to check for moisture and return to the oven if necessary. 🔺️Dry Ingredients: 3 cups sifted allpurpose flour 1 1/2 tablespoon baking powder 1 3/4 teaspoons Salt 2 teaspoons cinnamon 1 teaspoon ground cloves 1/2 tsp Ginger powder 2 teaspoons grated nutmeg 1/4 tsp cardamom 1 teaspoon coriander powder (Yes I mean coriander powder😄) 1 tsp ground allspice 🔺️Wet Ingredients: 4 1/4 cups PUREED soaked fruits (raisins, prune, currant, glace cherries, white rum, Jamaican Red label wine was soaked and blended together) 1 1/2 tablespoon vanilla 4 or more tablespoons Browning Few drops of Almond essence 4 tablespoons Orange juice 2 tablespoons lemon juice 🔺️Other ingredients: 4 sticks unsalted BUTTER (1 lb) 1 cup White granulated sugar 1 1/4 cup Soft brown sugar 8 large eggs (at room temperature) 1/2 teaspoon lime zest 1 teaspoon lemon zest 2 teaspoons finely grated orange zest Boiling water for the tray Extra Red Label wine and Jamaican white rum for spritzing the cake while hot out of the oven.
