he video features the making of Eau de Vie, a French "water of life," distilled from fermented pear mash, emphasizing its role in supporting local farmers and preserving open land in Oregon. It showcases the surprising dryness of the pear brandy, contrasting with its aromatic richness, and the distiller's commitment to land conservation and sustainable agriculture. It took Steve McCarthy of Clear Creek Distillery more than 2 decades to help establish a domestic (US) market for Eau de Vie. But he did it! Pear Brandy, as it's also called, is bone dry and very much an acquired taste. As McCarthy explains, there's a big mismatch between what you smell from the pear brandy aroma (smells like pears) and the taste you actually receive. Farmland preservation —as McCarthy points outs—can not solely rely upon land use laws to keep development at bay. Farm families need to be profitable for the food they grow and sell. Otherwise, economic pressures will ultimately result in farmland being converted into potential developmental properties. Achieving a profitable business for Steve McCarthy allows him to buy local fruit to help community farmers which helps promote land preservation.
