Aloo Ka Korma or Potato Curry is a tasty curry made using fried potatoes cooked in a thick gravy of coconut, nuts and other ingredients. METHOD 1.First we need to fry potatoes , for that we need Potatoes washed and peeled - 1/2 kilo cut into medium sized pieces 2.Heat oil and fry them till light brown in colour 3.Now we need to make a paste and the ingredients required are Dried and roasted coconut - 30 gram Cashew nuts - 10 Cloves - 3 Mace - a a small piece Cardamom - 2 Cinnamon sticks - 2 Fried onion - a big sized onion Yogurt - 100 gram Grind all these into a fine paste and keep aside 4.In a pan heat oil - 2 tablespoon Clarified butter - 1 tablespoon Add ginger garlic paste - 1 tablespoon Saute till raw smell disappears 5.Now add diced green chilies - 2 and saute for a few seconds 6.Add ground tomatoes - 2 medium sized And saute till raw smell disappears 7.Reduce the flame and add Kashmiri red chili powder - 1 tablespoon Black pepper powder - 1/2 teaspoon Garam masala powder - /2 teaspoon Coriander powder - 1 teaspoon Cumin powder - 1/2 teaspoon Turmeric powder - 1/2 teaspoon Mix them well and saute for few seconds 8.Add the ground paste and cook till oil appears on sides 9.Now add fried potatoes and cook by adding little water till potatoes absorb masalas well, also add salt as reuired 10.Now add water as required here I have added 1 and 1/2 cupof water 11.To it add Few coriander leaves Few mint leaves Lemon juice 1/2 to 1teaspoon When the gravy boils reduce flame and cook till potatoes turn tender 12.Serve hot with pulao or rice or parota
