The trend only recently became popular due to brands like Transition pushing the boundaries of bike geometry in hopes of creating a better "do it all" mountain bike. In a nutshell, fork offset is the measured distance from the steering axis to the mounting point of the front wheel. By changing the fork offset and headtube angle, bike brands have been able to craft longer, slacker, and more stable bikes that work better at high speed and going downhill but they can still climb with the steering precision they had when the headangle was steeper and wheelbase shorter. It's the catch-22 of making a bike work better going downhill while not sacrificing uphill performance. That is vital in a modern one-quiver trail/enduro bike as those Mtb's are made for doing both the ups and downs.
