How To Make Kalihim Bread | Filipino Breads and Desserts | Bahug - Bahug / Pan de Pula TOTAL TIME Prep: 30 min. + rising Bake: 15 - 20 min. MAKES: 16 INGREDIENTS: For the Dough 3/4 Cup Fresh Milk, warm 2 tsp. Instant Dry Yeast 3 Tbsp. White Sugar 2 1/4 Cups All-Purpose Flour 1/2 Tsp. Salt 2 Tbsp Powdered Milk 3 Tbsp. Unsalted Butter, melted 1 Egg For the Pudding: 5 Cups White Bread , cut into small pieces 3 Tbsp Powdered Milk 2 Cups Evaporated Milk 2 Eggs Beaten ½ Cup White Sugar 2 ½ Tsp. Food Coloring 2 Tbsp. Unsalted Melted Butter 1 Tsp. Vanilla For Brushing : 1 Egg and 1Tbsp milk DIRECTIONS Yeast Mixture: 1. In a bowl, dissolve 2 tsp. instant dry yeast and 1tbsp.sugar in 3/4 cup warm milk; let it stand until bubbles form on the surface.. Flour Mixture: 2. Whisk together, 1/2 tsp. salt, 2 tbsp sugar, 2 tbsp milk powder and 2 1/4 cups flour Filling Preparation: 1. Cut leftover bread into small pieces 2. Incorporate milk and red food coloring 3. In a bowl, combine bread , milk with food coloring, egg , sugar and milk powder, stir thoroughly until bread is moistened and color is evenly distributed. 4. Transfer to a pan, cook pudding over medium heat while stirring continuously to prevent from sticking to bottom of pan. 6. Continue to cook until paste-like consistency. 7. Add vanilla extract then stir. 8. Turn off heat, add butter and stir until equally distributed. 8. Let it cool . Prepare Dough: 1. Pour yeast mixture into flour mixture and stir gradually. 2. Add 3 tbsp melted butter and 1 egg. Stir thoroughly to form soft dough. 3. Knead until smooth and elastic for about 7-10 minutes. 4. Grease bowl and dough. Cover and let rise in a warm place for 1 hour or until doubled. 5. Follow Filling Preparation above. 6. Punch down dough to release the excess air, knead for 1 minute and divide into 2 equal size. 7. Using a rolling pin, roll and flatten half of the dough into a rectangular shape and add the filling at the center. 8. Fold over filling and pinch sides to close. 9. Slice into 8 equal size and move to a baking pan. Cover for 40 mins or until puffy. 10. Using a rolling pin, roll and flatten the second dough into a rectangular shape and add filling on left side. 11. Fold and pinch. 12. Move to a baking pan. Cover for 40 mins. 13.
