Recipe: St Vincent Ducuna Makes 12 Ducana 5 cups grated/processed Caribbean sweet potatoes (Do not use North American yam or sweet potatoes) ~2 cups grated/processed coconut ~1 cup grated/processed Tannia (you can use coco, eddo, taro, or dasheen) ~1 1/2 cups brown sugar (add 1/2 cup more sugar for sweeter ducuna or subtract 1/2 cup for less sugar) ~2 tbsp grated ginger (or 1/2 tsp black pepper or just omit) ~1 tsp vanilla ~1/2 tsp salt ~1/2 tsp cinnamon ~1/2 tsp nutmeg For wrapping: Banana leaves and string Other options for wrapping: Parchment paper and aluminium foil ~Wrap the mixture in parchment paper, then wrap it in aluminium foil (you don't want to put your food directly on aluminium foil) Hope you enjoy it, if you have any questions, leave them in the comment section. ___________________ -------------------------------- Show some love by subscribing to my youtube channel and share this video with other foodies.
