In this film I'll be pitting the traditional Still Spirits Air Still against the Air Still Pro to make a rhubarb and rose gin. I begin my making a tomato paste wash and running it through the air still pro in reflux mode to make a 85% spirit. This is then watered down to 40% and run through both stills simultaneously (the stills have juniper berries and rhubarb in them), when doing this I take cuts separating the heads, hearts and tails. The distillate is then put in demijohns with dried rose petals. This is left to stand before being filtered and bottled. Upon opening and tasting the spirits are very similar in quality and in all honesty the air still seems as good as the air still pro in pot still mode.
