This dish is inspired by Chef Edward Lee's tofu soup, featured on Culinary Class Wars (흑백요리사). As a Korean-Canadian myself, I really relate to Chef Lee's story. While I’m not sure of the exact recipe, I cook it based on what I observed in the episode. This cold tofu soup works wonderfully as an appetizer, but it’s also packed with nutrients, making it a great option for a light and vegan meal. I believe it could even be perfect for a diet-friendly dish! Chef Edward Lee’s concept is truly innovative. It would be exciting to experiment with different variations of tofu soups using Chef Edward Lee’s recipe as inspiration! Chef Edward Lee's Tofu Soup [Ingredients] 250g Tofu An Apple (medium size) 1/2 Cup Pine Nuts 300ml Soy Milk 1/4 tsp Salt *You can also add some apple chunks and grind them. [Garnish] Avocado 2 Tbsp Extra Virgin Olive Oil Chili Oil Pine nuts Apple chunks (if you wish) Herbs (Dill) *I think Chef Lee used dill.
