Mix until the oil is well incorporated, giving the flour a crumbly texture. Gradually add water and knead into a firm dough. Cover the dough with a cloth and let it rest for about 10-15 minutes. Shape the Namkeen: Divide the dough into small portions. Roll each portion out to the thickness of a paratha, around 2-3 mm. Cut the rolled dough into small crescent shapes resembling cashews (kaju). Continue until all the dough is shaped. Heat the Oil for Frying: Heat oil in a deep pan over medium heat. Test the oil by dropping in a small piece of dough; it should rise slowly without browning too quickly. Fry the prepared dough shapes in small batches to ensure even frying. Fry Until Golden: Fry the kaju-shaped pieces over medium heat until they turn golden brown and crispy. Stir occasionally to ensure even cooking. Use a slotted spoon to remove them from the oil and place them on a paper towel to drain excess oil. Make the Black Chaat Masala: Combine coriander seeds, jeera, black pepper, ajwain, long pepper, and dry red chili. Mix in citric acid, amchur, black salt, and regular salt. Grind all the ingredients together into a fine powder using a spice grinder. Prepare the Mint Chaat Masala: Mix dried mint leaves, chaat masala, and red chili powder. Grind this mixture until the mint leaves are finely blended with the chaat masala. Coat the Namkeen: In a large bowl, drizzle a little oil over the fried kaju-shaped pieces. Sprinkle the prepared black chaat masala and mint chaat masala over them. Toss gently but thoroughly to coat each piece evenly with the spicy mixture. Cool and Store: Allow the spiced namkeen to cool completely before transferring it to an airtight container to maintain its crispiness.
